The Lexington Barbecue Festival is a one day event, which started in October 1984.  Many of the barbecue places in town have booths to show off their tasty eats. There are other booths with other interesting items for sell, bands play, and fun to be had by all round.   This one day festival attracts over 160,000 people. It is listed in the book of 1,000 places to see in the United States and Canada before you die. US News and World Reports lists Lexington as #4 on its list of best cities for barbeque. In 2009 we were part of the 160,000 and it felt like it too. LOL

North Carolina barbeque is slow-cooked pork over coals using hickory wood.  The pork is then either sided, chopped or pulled.  It is served on a tray with coleslaw and hushpuppies.

Lexington style - used a vinegar based "red" sauce that is seasoned with ketchup, vinegar and pepper and "secret" spices.  They also serve a red slaw made by using the Lexington style barbecue sauce instead of mayonaise.

This is the end of the Lexington Pigs
